In that case, humor us folks who are used to hibernating in winter and worshipping the sun’s rays come summer.
In the spirit of bright locals, this version of the sunshine cocktail is said to originate from the Sunshine State itself, where pineapple is plentiful. Other versions might call for lemon juice, lime juice, orange wine (made only in Florida, from rotten oranges; seriously), orange bitters, or the like, but we’re sticking with pineapple juice and grenadine. Gotta give Florida some credit where it’s deserved.
And because this recipe doesn’t call for any high-maintenance swizzling, spritzing, or swaddling, you can throw the ingredients in a thermos, dump a bag of ice in a cooler, and shake up a few into solo cups on the beach. A sunshine to toast the sunshine, if you will. Now go work on your tan.
